The problem is that Client Side Encryption is not triggering because the theme has customised WooCommerce checkout process and apparently skipped a step. When the customer clicks the button to complete their purchase, WooCommerce triggers a JavaScript event "checkout_place_order_eway_payments" which tells the code to run Client Side Encryption. The theme's customisations skip that step, so the card details are sent to eWAY without encryption and payment fails and it keeps asking for credit card number.
