I would like to hire a Logo Designer for a Restaurant Logo

Hello. I'm working to open a restaurant in East Bay of San Francisco Bay Area in the U.S. and looking for someone who gets our concept below and design a logo for us. Below is our concept. Fish & Bird is a modern Japanese Izakaya in East Bay of San Francisco Bay Area. Sousaku Japanese cuisine means creative Japanese cuisine, and Izakaya is a small plate/tapas type of food consumed in restaurant/bar. It's the type of food that isn't really available here -- lots of Japanese food around here is old school from 1990's or earlier. Target audience is 30 to 60 years old with good amount of disposable income who is willing to pay at least $45 for food/beverage combined per person in a tapas like place. The name of the restaurant is inspired by Tom Waits song name Fish & Bird, where a bird falls in love with a fish (whale). Excerpt " He said, 'You cannot live in the ocean' And she said to him 'You never can live in the sky' But the ocean is filled with tears And the sea turns into a mirror There's a whale in the moon when it's clear And a bird on the tide" end Excerpt So we dub this to Japanese expat living in the U.S., in that we choose to live here, but we cannot be in Japan the same time, and our restaurant, is where both the world comes together. If you can try integrating 2 kanji character for accent in the logo it might be interesting, but it's just a thought and not a must -- fish: 魚 bird: 鳥 Logo should include "Fish & Bird" as the main name and then "Sousaku Izakaya" in a smaller font (it explains what we are).
