Reconcile and create accounts in QuickBooks Online

We're a new company to QuickBooks Online. Just imported our entries from our accounts.
We're a psychiatric practice and we'd like to track payments from various payers.
Many of the payments are from insurance carriers, which we'd like labeled as "insurance" and then the name of the company, so 2 tiers of labeling.
We also receive stipends from various facilities. These come from 5 different types of facilities: hospitals, partial hospitalization programs, skilled nursing facilities, assisted living facilities, and addictions programs.
We'd like these stipends labeled as "stipends," then the type of facility, then the name of the facility, so 3 tiers of labeling.
We'd also like a catch up of our books for the year so far, as well as reconciling the initial balances. I've had a hard time with that!
The goal is to have the following:
-A report that clearly tells us how much money is coming from insurance, how much is coming from stipends, and what kind of stipends they are (SNF, assisted living, etc.) (we will be using quickbooks to invoice, so that will help with this process)
-Correctly reconciled accounts
Our biggest expenses are the amounts we pay our employees and independent contractors. If you can help us create them as vendors that would be great as well.
We currently use ADP for payroll, though we're looking into switching over to quickbooks.
Anyway, let me know if you can help set things up so that we can get accurate reports that give us the information we need for our business.
I guess one more thing we would like to know is how much money we are bringing in from the amount we collect from our providers. We keep a percentage of each provider's paycheck and it would be nice to see a summary of that.
