Add once off deposit order fee and Consolidate Orders in My Shopify Store

Hi there :)

I have a shopify store which I need help with.

Firstly, I need to set up in the backend, that when a customer places their FIRST order they are charged an automatic once off deposit fee, with some information next to the fee explaining the reason for the deposit as well as the fact that it will be returned. This needs to be added into the checkout section of my website.

Secondly, my business requires that I go to a market every morning and buy produce based on the orders I have received... What I want, is a way to combine the contents of my individual orders into a downloadable spreadsheet/document, in order for me to see how many of each item I will need to purchase to fulfill my orders.
