Woocommerce custom php page to grab specific order info and manipulate data

We run an alternative investment service and have amassed a large following of people in a short time and are trying to create a new platform to expedite our workflow. We currently use massive google sheet documents but it is unsustainable now. we need to make a more attractive UI. I am confident in UI building, but the backend of how functions work are not my forte. I am trying to learn but the process is slower than we need right now... We have decided that woocommerce can be used as a perfect base for our needs!
So firstly, we have a snippet of code that grabs some information already, but doesn't do EVERYTHING we need. I can provide that snippet of code if think this project is possible. We would like to be able to gather specific order details, and then use that info to run some mathematical calculations, create a string text from the data fetched from orders, and then append the data to a mysql table. Again, I have a general sketch of what is needed and can explain all details over skype much clearer than a picture could by itself. It would also help with explaining our workflow too.
The look of the final page is not super critical as I am confident I can make it look appealing to the 2 people who will be using it ...
