Hi I have 10 yrs experience with Joomla and Virtuemart see strongcode.net. Your description is missing some details that could be a lower price. A module is typically in the column and shows the category names, its easy to create a second module that only shows category names with no image but the Virteumart cat modules dont show images by default its also easy to hide all category images with css. However, I think you talking about hiding images in the component main body area which requires modifying a shop page template in VirtueMart so you can have some cats show images and others not and assign that template to certain categories. That is what Im biding for.
