Integrating LearnDash LMS with WooCommerce Errors

We have an e-Learning site built on a WordPress platform. It has an integration between the LMS (LearnDash LMS) and woo commerce for payments.
The previous developer made a custom change to the template to allow for a particular South African based payment gateway. Our understanding is that he built this into the template and we discovered that we could not upgrade the WordPress site to the latest version without the site misfunctioning.
We recently had to update the site to PHP8 at the insistance of our host.
This has led to a problem with the course modules not displaying for the many learners subscribed to the system and we require urgent intervention to:
1. Trace the problem of the course content not displaying for clients.
2. Make the corrections to enable the content to show up urgently.
3. Find the custom code that prevents us from updating the WordPress operating system and devise an alternative implementation that will allow regular updates without making the site go down.
There is also a legacy LMS that was part of the site in the past and this needs to be removed now or retired permanently.
The php error logs also need to be activated.
Applicants must show demonstrable ability with these systems and need to be able to sort the problem out within a few hrs.
