I have developed several apps using the Watson SDK for Unity which is capable of deploying games to the Daydream Mirage Solo headset with full audio input features that you require. Storing the transcripts and sentiment analysis from the Watson assistant on the cloud is not a problem and reading in/storing external sensor input shouldn't be a problem as long as the sensor is able to transmit that data via bluetooth or directly to the internet. Additionally do you have a model of the assistant that will be asking the questions and is it properly rigged & animated for speech output, I can provide this however it may change the delivery date slightly. Also the way I will build this will allow for easy cross-platform capabilities if that is something you are interested in down the road.
